1. Thaw 1/2 lb. Large shrimp, remove shell and veins. Get pre cut and carved squid chunks, available in some grocery stores, most likely you will find in the frozen food section in Chinese grocery store, thaw the squid, rinse clean.
2. Add 1 tablespoon corn starch to the shrimp and squid, mix together.

4. Heat a non sticky wok with 1 tablespoon canola oil using medium heat. Add the celery pieces, stir evenly, cover the wok, let the celery pan fried for about 5 minutes. Stir a couple of times to evenly cook the celery.
5. Push the celery to one side of the wok, add 1 tablespoon canola oil, add 2 cloves of minced garlic, a few slices of ginger, 1 chopped red hot chili pepper (skip the hot pepper if you do not hotness, or add more if you love spiciness). Stir evenly the ginger, garlic, pepper, let it pan fry for 1 minute or so to let the aroma come out.
6. Add the shrimp and squid mixture to the wok, cover and pan fry for about 3 minutes.
7. Add a pinch of salt and sugar, sprinkle 2 fine chopped green onion, stir fry all ingredients for about 2 minutes.
