A super simple and delicious potato dish that stimulates appetite because of the hot jalapeno pepper, great for summer time with rice. It is a excellent choice for lunch at work.
Ingredients
- 1 potato (around 1/2 lb)
- 1 jalapeno pepper
- 1 tablespoon cooking vegetable oil
- A pinch of salt and sugar

Cooking Steps
1. Take 1 potato (about 1/2 lb), remove the skin, cut potato into very thin slices, then cut the slices into very thin pieces.
Add the potato pieces to water (to remove the starch and prevent from turning brown).
2. Heat a wok (medium), add 1 table spoon of cooking oil, add chopped green onion and sliced 1-2 Jalapeno pepper, cook for 1 minute.
3. Take the potato pieces from the water (use sift to remove the water), add them to the wok, stir fry all ingredients evenly, add a pinch of salt to taste. Stir fry 5-10 minutes or until the potato is fully cooked.
