Stir Fried Shrimp with Zucchini and Jalapeno


A simple stir fry recipe using zucchini, jalapeno pepper and shrimp.


Cooking Steps

1. Cut 2 Jalapeno peppers to thin slices. Cut 1 zucchini into thin slices. Clean 1 dozen shrimps, remove skin and veins. If ground pork is available, use 1/4 lb ground pork (this can be skipped).
2. Use high heat to heat a wok with 2 table spoon of cooking vegetable oil, add chopped green onion, 2 cloves of minced garlic, stir for 1 minute. Add ground pork is available, stir fry for 2 minutes.
3. Add shrimp to the wok, stir fry for 1 minute.
4. Add chopped jalapeno and zucchini to the wok, add a pinch of salt, a pinch of sugar, stir evenly all ingredients. Add a few drops of sesame oil. Serve with rice.

Tip: Avoid overcooking the vegetables so that they look fresh, green and crisp.
