- 1 lb. mustard green (available in most American grocery stores, buy the ones that look fresh and tender)
- 1 tablespoon salt

Preparation Steps
1. Clean 1lb mustard green using water, drain dry (no need to be completely dry).
2. Fine chop the mustard green into small bits, add to a large mixing bowl.
3. Sprinkle 1 tablespoon salt to the mustard green, mix evenly, let it sit for 10 minutes.
4. Move the salty mustard green into a big jar, seal, keep in fridge.
5. The salty mustard green is ready for consumption after 2 weeks. Finish it within 1 week, otherwise freeze for longer storage time.
