Chicken Drumstick Salad with Green Onion




A simple delicious chicken drum stick salad with green onion, very light and healthy.

Ingredients
  • 6 chicken drumstick ( around 1 to 1.5 lb depending on how big each drumstick is)
  • 3 green onion
  • A few slices of ginger
  • 1 tablespoon salt (see salt amount table based on chicken weight)
  • 2 tablespoon vegetable oil

Preparation Time: 30 minutes (or overnight)
Cooking Time: 30 minutes
Servings: 4

Cooking Steps

1. Sprinkle 1 tablespoon salt on top of 6 chicken drumsticks, marinate for 1 hour (overnight will give the best result with tasty and tender meat).
2. Boil a medium size pot with 5 cups of water, add a pinch of salt, 1 coarse chopped green onion.
3. Rinse the drumstick with water, wash off the salt, add them to the boiling water, cook for 1-2 minutes to boil, turn heat to medium low, cover the pot, let it simmer for 20 minutes or until there is no blood coming out of the meat.
4. Take the drumstick out of the soup, place in a large plate, let it cook down.
5. Clean 3 green onion, fine chop.
6. Heat a wok with 2 tablespoon vegetable oil, add the fine chopped green onion, sprinkle a pinch of salt, cook for 30 seconds.
7. Remove the bones from the chicken drumstick, cut into 1/2 inch thick slices, place to a large bowl or plate.
8. Add cooked green onion with the vegetable oil to the chicken slices, mix evenly. Add more salt if needed.



    Tip:

Place the chicken meat in fridge for sometime will make it a great salad for summer.
The chicken stock will be great for other dishes.
Use chicken quarter leg will give the same great result.
