Stir Fried Opo Squash with Pork Slices, Napa Cabbage and Corn


Most of the times, preparing a few vegetable dishes takes time and effort. This simple dish combines opo squash, napa cabbage and corn together, so you only need to prepare one vegetable dish to get nutrition from a varieties of vegetables.


Ingredients
  • 1/2 lb. Opo squash
  • 1/8 lb. Pork meat
  • 1/4 lb. Napa cabbage
  • 1/4 lb. Corn
  • 3 tablespoon canola oil
  • 1 teaspoon corn starch
  • A few slices of ginger
  • 1 green onion (why buy from store? grow your own green onion)

Cooking Steps

1. Get 1/2 lb. Opo squash, rinse clean, cut into 1/4 inch thick half circle shaped slices.
2. Get 1/4 lb. Napa cabbage, rinse clean, cut into thin and narrow slices.
3. Get 1/8 lb. Pork meat, cut into thin slices, add 1 teaspoon corn starch, mix evenly.
4. Get 4 large shrimps, remove skin, vein, cut into small bits.
5. Get 1/4 lb. Corn.
6. Add 2 tablespoon canola oil to a non sticky wok, use medium heat to heat the wok, add a few slices of ginger, 1 fine chopped green onion to the wok, pan fry for 1 or 2 minutes to let the aroma come out.
7. Add the pork slices to the wok, spread them evenly, no overlaps, pan fry for 1 minute, flip to pan fry the other side for 1 minute. Take them out and place in a bowl.
8. Add 1 tablespoon canola oil to the wok, add the opo slices, no overlaps, cover and pan fry for 2 minutes, flip to cook the other side for 2 minutes.
9. Push the opo slices to one side of the wok, add the napa cabbage, stir fry for 2 minutes.
10. Add the precooked pork slices back to the wok, add the shrimp bits add 1/4 cup of chicken stock, stir fry all ingredients evenly for 2 or 3 minutes, or until all ingredients are fully cooked.
