Shanghai Style Wonton Soup


A very traditional Shanghai style wonton recipe, with delicious pork, shrimp and vegetable filling.

The generous portion of vegetable makes it a great meal with balanced nutrition, especially for kids who do not like to eat vegetable! .

Ingredients
  • 1 lb. plain ground pork
  • 1 dozen shrimp
  • 1 lb. (1 pack) Shanghai style wonton wrapper (white color)
  • 1 lb. Bok Choy or Napa cabbage
  • 1 chopped green onion, 2 table spoon cooking oil, 2 table spoon corn starch, 1 teaspoon salt, 1 teaspoon sugar, a few drops of sesame oil
Preparation Time: 40 minutes
Cooking Time: 20 minutes

Cooking Steps

Prepare the Wonton Filling

1. Rinse clean 1 lb. Bok Choy, cut into small bits, add to a large bowl, add 1 tea spoon salt, mix evenly.

Tip: With this much generous portion of vegetable, there will be a lot of water coming out after putting salt. Do not worry, the ground pork will absorb the moisture pretty well, which makes the meat tender, also adding corn starch will help the meat tender and all filling ingredients stay together nicely.


2. Clean 1 dozen shrimp, remove skin and veins, cut into small pieces, add to the large bowl.




3. Add 1 lb. ground pork to the large bowl, add 1 chopped green onion, 2 table spoon cooking oil, 2 table spoon corn starch, 1 tea spoon of sugar, a few drops of sesame oil, mix all ingredients well.

   Tip: 
    It is always a good idea to taste the filling first, simply adding a little bit filling to a small plastic spoon (or other microwave safe spoon), use microwave to heat the sample for a few seconds (depending on the sample size, adjust the time accordingly) or until it is fully cooked, avoid overcooking the sample.

5. Buy 1 pack (1lb) Shanghai style wonton wrapper from Chinese grocery store (Shanghai style wonton wrapper does not contain eggs, thus it looks whiter than Cantonese style wonton wrapper, it usually has around 60 wrappers).

6. Wrap the wonton.



 









7. Boil another pot of water, add the wonton to the boiling water, cook for 10 minutes (once all the wontons are floating to the top, this indicates they are almost ready, cook for a few more minutes so the wrapper can be tender).
8. Add the chicken soup to medium size serving bowls, add 5-10 wonton to the serving bowl, add chopped green onion and a few drops of sesame oil, pepper.

A delicious filling makes the difference, adding shrimp and generous portion of vegetable is the key.
