Pork Meatball Soup with Potato


A simple and rich pork meatball soup with potato, great for cold weather.


Ingredients
  • 1 lb plain ground pork
  • 1 cup chicken stock
  • 3 tablespoon cornstarch
  • A pinch salt
  • 2 green onion
  • A few slices of ginger
  • 1 (about 1 lb.) potato

Preparation Time: 20 minutes
Cooking Time: 20 minutes

Servings: 4

Cooking Steps




1. Boil a pot of water (6 cups), add 1 coarse chopped green onion, a few slices of ginger, a pinch of salt.
2. Get 1 potato (about 1 lb), remove skin, cut into 1 inch size cubes, add the pot, boil, turn heat to medium, cover the pot.
3. While the potato is being cooked, prepare the meatball.
4. Use spoon to get the filling to make 1 inch size meatballs, add to the boiling potato soup.
5. Boil all meatballs for 10-15 minutes or until they are fully cooked and potato is soft.
