Double Cooked Pork (回锅肉)


A very traditional Schezuan (Si Chuan) style spicy dish that combines double cooked pork slices and vegetables, such as peppers.


Ingredients
  • 1 lb pork shoulder meat with skin on
  • 2 green onion
  • 2 cloves of garlic
  • A few slices of ginger.
  • A pinch of salt
  • 2 tablespoon vegetable oil
  • 2 tablespoon soy sauce
  • 2 tablespoon sugar
  • 1 tablespoon PiXianDouBan.
  • 1/2 lb cabbage
  • 1-2 jalapeno pepper

Preparation Time: 10 minutes
Cooking Time: 40 minutes

Prepare the Meat

1. Use the portion of pork shoulder that has both skin and meat (1 lb).
2. Fill a pot with half of water (6-7 cups), boil the water while preparing the meat.
3. Cut the pork into 3 inches chunks, put the meat chunks into the pot, add green onion, ginger, a pinch of salt. Remove foams from the top of the water. Cover.
4. Cook the meat for 30-40 minutes (1 hour if softer meat is preferred).
5. While cooking the meat, prepare the vegetable:
    1-2 chopped green onion, 2-3 cloves minced garlic, 1/2 lb cabbage, 1-2 jalapeno peppers


Ideally the authentic Schezuan double cooked pork needs the fresh garlic chive, but this ingredients is usually hard to find, so replacing it with green onion and garlic clove is fine:

6. Take the meat chunks out and cut into thin slices.



Cooking Steps

7. Heat wok with 1 table spoon cooking oil, add the meat slices with no overlaps, turn heat to medium.

8. Cover the wok,  let the meat cook for 2 minutes, flip, cook other sides until the meat turn golden brown, be sure to cover the wok as much as possible, since the skin will pop and oil might come out.
 

9. Push the meat slices to side of the wok, add 1 table spoon cooking oil, add ginger, chopped green onion, minced garlic, add 1 tablespoon PiXianDouBan (see notes).


10. Stir fry the ingredients, add 2 table spoon soy sauce, 2 table spoon sugar, stir fry everything including the meat slices.


11. Add the vegetables (cabbage, jalapeno pepper,etc) to the wok, turn heat to high, stir fry for about 5 minutes.


Serve with plain steamed rice.



Notes:
Pi Xian Dou Ban (郫县豆瓣) is a traditional sauce from Si Chuan province, it adds special flavor to the dish. It can be found in most Chinese grocery stores.
If not available, use plain chili oil/sauce/paste.
Tip: Prepare more cooked pork meat, save it in fridge. When needed, simply take it out for stir fry.
