Bizarre Schezuan Style Spicy  Sauce (怪味鸡调料)

A "bizarre" traditional Schezuan (Si Chuan) style spicy sauce that goes typically with chicken salad. It has the unique combination of salt, sugar, vinegar and chili sauce, that is why it is called "bizarre sauce". It works great as dressing for many salad dishes, stir fries, and dipping for pan fried wontons, pot stickers, etc.




Cooking Steps
1. Get a small container, add the following ingredients:
  • 1/3 cup of soy sauce
  • 2 table spoon sugar
  • 2 table spoon chili oil (Lao Gan Ma Chili Crisp Sauce)
  • 1 tablespoon Chinese black rice vinegar
  • A few drops of sesame oil
Stir all ingredients evenly.

2. Optional ingredients:
(1) Add 1 tablespoon pure sesame paste (available in Chinese grocery store).
(2) Add "Fried PiXianDouban" (油酥郫县豆瓣): Heat a wok with 2 tablespoon vegetable oil, add 2 tablespoon PiXianDouBan, stir fry for 1 minutes.

The traditional recipe uses above 2 optional ingredients. But I feel they can be skipped without compromising the final result. Adding "Fried PiXianDouban" (油酥郫县豆瓣) might make the final sauce too salty.The sesame paste is better to put during the serving time, it will float to the top if the sauce stays in the fridge for longer storage time.

When serving, add fine chopped green onion, minced garlic, roasted sesame seeds. Avoid adding the fresh green onion and minced garlic directly to the sauce if the sauce is intended for longer storage time.

Tip
It is important to have the right portions of different ingredients, especially the sugar.
