Ants in the Tree



A traditional fun Chinese mung bean noodle stir fry dish. The bean threads are the "tree", the ground pork bits are the "ants".


Prepare the Bean Thread

1. Boil a pot of water.
2. Add 3-4 bunch of bean thread, cook for about 1 minute. Take the bean thread out.

Note: Do not overcook the bean thread, the briefly cooked bean thread will contain less water, thus they will absorb the moisture from other ingredients such as vegetable, soy sauce, etc. Overcooking the bean thread will make the dish soggy.

Cooking Steps

3. Heat a wok using medium high, add 2 table spoon cooking oil, add 1/4 lb ground pork, stir evenly and let it cook for about 10-15 minutes or until the pork bits turn to golden color.
4. Add chopped green onion, minced garlic and chili sauce, and any 1-2 cup desired chopped vegetable (such as Napa cabbage, bell pepper, etc) to the wok, stir evenly.
5. Add the previously cooked bean thread to the wok, add 1-2 table spoon soy sauce, 1 tea spoon sugar to the wok, add a few drops of sesame oil, stir all ingredients evenly for 5 minutes or until all ingredients are fully cooked.
